Preheat the oven to 350. Grease the bottom of a 8x8 square pan.
Whisk eggs in a large bowl and add milk, oil, sugar and apples. To the bowl, add oats, baking powder, baking soda, salt and pecans and stir until combined.
Pour the mixture into the pan and bake for 30-35 minutes or until the oatmeal feels set and the top is starting to brown. Remove from the oven and allow to cool 10 minutes before serving.
Leftovers can be stored in the fridge for up to a week and can be served cold or warmed in the microwave for a few seconds.
