Ooh hey there, Friday. I see you over there, looking all sunny and chock full of fun weekend plans.

I ache for the weekends in the summer more than any other time of the year. Dinner on Friday is so much more enjoyable on the patio of my favorite restaurant, Saturday morning is made for browsing the Farmer’s Market, and Sunday brunch just tastes so much better when served al fresco at a girlfriend’s house.

This is the perfect summer drink for those boozy weekend afternoons. It’s light, crisp and a great way to use up an entire watermelon. I run about a quarter of a large watermelon in my blender then strain it to get the juice. A pitcher of this alone is absolutely worth keeping in the fridge during the week.

I’m pairing the watermelon juice with mint and gin, two of my favorite things to enjoy in the summer. Everything gets topped with a little carbonated water to keep things light and crisp.

Watermelon Gin Mint Fizz

Serves 2

  • 6-8 Mint Leaves
  • Ice
  • 2 Oz. Gin
  • 2 Oz. Watermelon Juice
  • Carbonated Water

Place the mint leaves in the bottom of two glasses. Add ice and use a spoon to muddle the mint. Add an ounce of gin and watermelon juice to each glass and top with carbonated water. Serve and enjoy!
