Ingredients
  • 2Medium BananasPlus more for topping (optional)
  • 1 1/4Cup Steel Cut Oats
  • 1Cup Unsweetened Shredded CoconutPlus more for topping
  • 1Can Full Fat Coconut Milk
  • 1/2Cup Hemp Protein PowderOptional, can sub vanilla protein powder
  • 1/4Cup Maple SyrupOptional
  • 1Cup RaspberriesOptional
Instructions
  1. Mash two bananas in the bottom of a medium pot. Place the pot on a burner and turn the heat to medium. Add the steel cut oats and shredded coconut. Stir to combine then add the coconut milk. Keep stirring as the mixture comes to a simmer. Keep stirring while adding 1/4 cup water and bring the mixture back to a simmer. Repeat this step until the oats have cooked through and you’re happy with the consistency. Cooking times vary anywhere from 7-25 minutes, so check the package to get an idea of how long your oats will take. Remove from the heat and add the protein powder and maple syrup (if using). Serve warm topped with banana slices, coconut, and raspberries (if using). Store leftovers in the fridge. To reheat, add a splash of water or favorite milk and warm in the microwave for 2-3 minutes.
