Baked Apple Pecan Oatmeal

- 2 large eggs
- 1 cup milk
- ⅓ cup neutral oil
- ⅓ cup sugar
- 2 medium apples shredded with a cheese grater
- 2 cups oats I used quick oats, but rolled would work here just fine
- ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup pecans chopped
Instructions
- Preheat the oven to 350. Grease the bottom of a 8x8 square pan.
- Whisk eggs in a large bowl and add milk, oil, sugar and apples. To the bowl, add oats, baking powder, baking soda, salt and pecans and stir until combined.
- Pour the mixture into the pan and bake for 30-35 minutes or until the oatmeal feels set and the top is starting to brown. Remove from the oven and allow to cool 10 minutes before serving.
- Leftovers can be stored in the fridge for up to a week and can be served cold or warmed in the microwave for a few seconds.
I’m a big fan of batch baking. A few minutes of prep and I’ve got a breakfast that will last me and my family a couple days.
This baked oatmeal is lightly sweet and flavored with crisp, juicy apples. It’s a perfect breakfast for any time of the year, but I tend to enjoy it most in the colder months with a hot cup of coffee.
