Because nothing screams ‘PARTY’ like a good ol’ taco bar.
I can’t imagine myself or anyone else being sad while standing around a table full of crispy tortilla chips, creamy guacamole, trays with steamy taco filling, and jars of various salsas and hot sauces. If I could make one request for my own funeral, it would be that there be a taco bar after the wake. But in the meantime, I’ll enjoy preparing delicious Mexican eats for my family and friends and sharing them with you here.
If you’re bringing Cinco de Mayo festivities home this year, I have a round up of delicious recipes you can make for your celebrations.
Vegetarian Chipotle Sweet Potato Tacos
Smashed avocados, sautéed zucchini, and delicious chipotle rubbed sweet potato fries stuff these meat-free tacos.
Easy 4 Ingredient Guacamole
This guac would make an easy side to prepare for your Cinco de Mayo celebrations
Marinated Sheet Pan Fajita
Juicy, tender marinated steak nestled in soft tortillas would be a perfect party addition
Plantain Tacos with Corn Salsa
Another vegetarian option, sweet plantains make up the filling for these incredible tacos.
Mexican Venison Chorizo Burgers with Roasted Poblano Corn Salsa
No venison? No problem. Sub beef or turkey for these Mexican inspired burgers!
Chicken Tacos with Mango Pineapple Black Bean Salsa
Can’t go wrong with a classic. The salsa is bright and perfect with chicken and cotija cheese.
Crispy Baked Shrimp Tacos with Roasted Pineapple Salsa
Crispy shrimp without a fryer? Yes you can! Don’t tell the others, but this one is my favorite.
Beer Braised Brisket with Southwest Creamed Corn
Sure, braised beef isn’t exactly traditional Cinco de Mayo fare, but this is pretty darn delicious with a cold cerveza.
White Chicken Chili with Roasted Tomatillo Salsa Verde
Serve warm with crispy tortilla chips!
Pineapple Cucumber Quinoa Salad
Need a light side for your Cinco de Mayo celebrations? Look no further!
